This easy 5-ingredient Fall Chex Mix is the perfect sweet-salty snack for autumn gatherings. Made with Rice Chex, pretzels, butter, brown sugar, and pumpkin pie spice, it comes together in 15 minutes and bakes to a perfect crunch.

  • 9 cups Rice Chex cereal
  • 2 cups mini pretzel twists
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup packed light brown sugar
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. In a large mixing bowl, combine 9 cups of Rice Chex cereal and 2 cups of mini pretzel twists. Toss gently to distribute.
  3. In a small saucepan over medium heat, melt 1/2 cup (1 stick) of unsalted butter. Once melted, add 1/2 cup packed light brown sugar. Stir constantly until the brown sugar dissolves completely, about 2 to 3 minutes.
  4. Remove the saucepan from heat and stir in 1 teaspoon of pumpkin pie spice until combined and fragrant.
  5. Slowly drizzle the warm butter mixture over the cereal and pretzels while stirring continuously. Continue stirring until every piece is evenly coated.
  6. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread the coated Chex mix in a single, even layer.
  7. Bake for 45 minutes, stirring every 15 minutes to ensure even coating and crunch.
  8. Remove from the oven and let the Chex mix cool completely on the baking sheet, about 30 to 45 minutes. The coating will harden as it cools.

Notes

For best results, use unsalted butter to control salt level. Rice Chex holds up better than Corn Chex. Stir every 15 minutes during baking to prevent burning. Let cool completely before storing to maintain crunch. Store in an airtight container at room temperature for up to 2 weeks. Can be frozen for up to 3 months. To re-crisp, bake at 250°F for 10 minutes.
