  • 1 cup (120g) plain breadcrumbs
  • 1 cup (240ml) ketchup, divided
  • 1/2 cup (100g) packed light brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides.
  2. In a small bowl, whisk together 1/2 cup (120ml) of the ketchup and the 1/2 cup (100g) of packed light brown sugar until smooth. Set aside.
  3. In a large mixing bowl, combine the ground beef, eggs, breadcrumbs, remaining 1/2 cup (120ml) ketchup, salt, and pepper. Gently mix with your hands just until combined. Do not overmix.
  4. Transfer the meat mixture to the prepared loaf pan. Gently press it into an even shape, avoiding air pockets. Do not pack it down firmly.
  5. Pour the reserved brown sugar glaze over the top of the meatloaf and spread it evenly.
  6. Place the loaf pan on a baking sheet and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C) in the center.
  7. Remove from the oven and let rest in the pan for 10-15 minutes. Use the parchment paper handles to lift the meatloaf out, slice, and serve.
