These Cheesy Buffalo Chicken Dip Stuffed Garlic Bread Boats are the ultimate game day appetizer. A hollowed loaf of Italian bread is stuffed with a creamy, spicy buffalo chicken dip, brushed with garlic butter, and baked until golden and bubbly.

Ingredients

Scale
  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup ranch dressing or blue cheese dressing
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 large loaf Italian bread or French bread (1214 inches long)
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/4 cup shredded mozzarella or Parmesan for topping
  • Extra ranch or blue cheese dressing for serving (optional)
  • Thinly sliced green onions or chives for garnish (optional)
  • Celery sticks or carrot sticks for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. In a medium mixing bowl, combine shredded chicken, softened cream cheese, buffalo hot sauce, shredded cheddar, shredded mozzarella, ranch or blue cheese dressing, garlic powder, and onion powder. Mix until well combined and creamy. Season with salt and pepper to taste.
  3. Cut the loaf of bread in half lengthwise. Hollow out each half, leaving a 1/2-inch thick shell. Save the removed bread for another use.
  4. In a small bowl, combine melted butter and minced garlic. Brush the garlic butter all over the inside and cut edges of the bread halves.
  5. Divide the buffalo chicken dip filling evenly between the two bread halves, pressing it down gently. Sprinkle the remaining mozzarella or Parmesan cheese over the top.
  6. Bake for 15-18 minutes, until the cheese is melted and bubbly and the edges of the bread are golden brown. For extra browning, broil for the last 1-2 minutes.
  7. Let the bread boats cool for 2-3 minutes. Garnish with parsley and green onions if desired. Slice each boat into 4-6 pieces and serve warm with extra ranch or blue cheese dressing and celery sticks.

Notes

For extra crispy edges, brush the hollowed bread with garlic butter and bake alone for 5 minutes at 375°F before adding the filling. Use room temperature cream cheese for smooth mixing. Shred your own cheese for better melting. Let the boats rest for 2-3 minutes after baking to allow the filling to set.
