Ingredients

Scale
  • 3 cups (270g) rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 2 cups (480ml) milk (whole or 2%)
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) pure maple syrup
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups (280g) fresh or frozen blueberries
  • 2 tablespoons (25g) brown sugar (optional, for topping)
  • ¼ cup (30g) chopped pecans or walnuts (optional, for topping)

Instructions

  1. The evening before serving, grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large bowl, whisk together rolled oats, baking powder, cinnamon, and salt.
  3. In the same bowl, whisk together milk, eggs, maple syrup, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir with a rubber spatula until evenly moistened.
  5. Gently fold in the blueberries (if using frozen, add straight from freezer).
  6. Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle with brown sugar and nuts if desired.
  7. Cover tightly with plastic wrap or a lid and refrigerate for at least 8 hours or overnight.
  8. The next morning, preheat oven to 375°F (190°C). Remove dish from fridge and let sit on counter for 10 minutes.
  9. Cover dish with aluminum foil and bake for 25 minutes.
  10. Remove foil and bake for another 15-20 minutes, until top is golden brown and edges are bubbling. Center should be set but slightly jiggly.
  11. Let the baked oatmeal rest for 5-10 minutes before serving.

Notes

For best texture, use rolled oats (not quick or steel-cut). The overnight rest is key for creamy texture. If baking immediately, increase covered time to 35 minutes and uncovered to 20 minutes. Let rest 10 minutes after baking for easier serving.
