  • 1 lb smoked kielbasa, sliced into 1/2-inch rounds
  • 1 medium head green cabbage, cored and roughly chopped
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon caraway seeds
  • 1 bay leaf
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Optional: fresh dill or parsley, sour cream, crusty bread for serving

Instructions

  1. Heat 1 tablespoon olive oil in a large Dutch oven over medium-high heat. Add the sliced kielbasa in a single layer and cook for 3-4 minutes per side until deeply browned and crispy. Transfer to a plate and set aside.
  2. Reduce heat to medium. Add the remaining 1 tablespoon olive oil. Add the diced onion and cook for 5-7 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the chopped cabbage to the pot. Cook for 8-10 minutes, stirring occasionally, until softened and starting to release liquid. Season with salt and pepper.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom. Add the caraway seeds and bay leaf. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes until the cabbage is tender.
  6. Remove the bay leaf. Stir in the apple cider vinegar. Return the seared kielbasa to the pot and warm through for 1-2 minutes. Adjust seasoning with salt and pepper. Serve hot, garnished with fresh dill or sour cream and crusty bread.

Notes

For a thicker stew-like consistency, mash some of the cooked cabbage against the side of the pot before adding the kielbasa back in. The soup tastes even better the next day as flavors meld. To freeze, cool completely and store in airtight containers for up to 3 months.
