  • 2 green onions, thinly sliced (white and light green parts only)

  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt (plus more to taste)
  • 1/8 teaspoon black pepper, freshly ground
  • 1/8 teaspoon paprika (smoked paprika if available)

Instructions

  1. Toast the pecans: Place chopped pecans in a small, dry skillet over medium heat. Shake the pan every 30 seconds until fragrant and slightly darkened, about 3-4 minutes. Transfer to a plate to cool completely.
  2. Prep the chicken: Remove skin from rotisserie chicken and discard. Pull meat off bones and shred or chop into bite-sized pieces. You should have about 3 cups. Place in a large mixing bowl.
  3. Halve the grapes: Rinse grapes, pat dry, and cut each in half lengthwise. Quarter if large. Add to the bowl with chicken.
  4. Dice celery and slice green onions: Finely dice celery and thinly slice green onions. Add to bowl along with chopped parsley if using.
  5. Make the dressing: In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic powder, onion powder, salt, pepper, and paprika. Taste and adjust seasoning.
