  • 3 cloves garlic, minced

  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup cold water
  • 2 tablespoons cornstarch
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon cold unsalted butter, cut into small pieces
  • 3/4 cup whole milk

Instructions

  1. Prep the aromatics: Dice the onion, slice the carrots and celery, and mince the garlic.
  2. Layer the ingredients in the crockpot: Place the chicken in the bottom. Top with onion, carrots, celery, and garlic. Pour in chicken broth and cream of chicken soup. Add thyme, parsley, black pepper, and salt. Do not stir.
  3. Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and shreds easily.
  4. Shred the chicken: Remove chicken, shred with two forks, and return to the crockpot. Stir.
  5. Thicken the broth: In a small bowl, whisk cold water and cornstarch until smooth. Pour into crockpot and stir. Cook on high, uncovered, for 15-20 minutes until broth is gently bubbling.
  6. Make the dumpling batter: In a large bowl, whisk flour, baking powder, salt, and garlic powder. Cut in cold butter with fingertips until mixture resembles coarse crumbs. Add milk and stir with a fork just until a soft, shaggy dough forms. Do not overmix.
  7. Add the dumplings: Drop rounded tablespoons of batter onto the surface of the simmering broth. Do not press down.
  8. Cook the dumplings: Cover and cook on high for 30-40 minutes until puffed and a toothpick inserted comes out clean. Do not lift the lid during the first 20 minutes.
  9. Rest and serve: Turn off the slow cooker. Let rest for 5 minutes before ladling into bowls.
