  • 1 cup (200 g) granulated sugar, divided
  • 2 tablespoons (16 g) cornstarch
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1.5 cups (180 g) all-purpose flour
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 6 tablespoons (85 g) cold unsalted butter, cut into small cubes
  • 3/4 cup (180 ml) cold buttermilk

Instructions

  1. Preheat oven to 375°F (190°C). Place a baking sheet on the lower rack to catch drips.
  2. Prepare the peach filling: Rinse peaches (do not peel). Slice each peach in half, remove pit, and cut each half into 6-8 wedges (about 1/2-inch thick). Place in a large bowl. Add 1/2 cup (100 g) sugar, cornstarch, lemon juice, cinnamon, and vanilla. Toss gently to coat. Let sit while making biscuit dough.
  3. Make the buttermilk biscuit topping: In a medium bowl, whisk together flour, remaining 1/2 cup (100 g) sugar, baking powder, baking soda, and salt. Add cold butter cubes. Cut in with a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized butter pieces.
  4. Add buttermilk: Pour cold buttermilk into flour-butter mixture. Stir with a spatula just until a shaggy dough forms. Do not overmix.
  5. Assemble the cobbler: Pour peach mixture into a 9×13-inch baking dish and spread evenly. Drop spoonfuls of biscuit dough over the peaches (about 8-10 large spoonfuls), leaving gaps for bubbling.
  6. Bake: Place dish on the preheated baking sheet. Bake for 40-45 minutes, until biscuits are deep golden brown and filling is bubbling thickly around edges. If biscuits brown too quickly, tent loosely with foil for last 10 minutes.
  7. Cool: Remove from oven and let rest on a wire rack for at least 15 minutes before serving.
