This one-bowl banana bread with chocolate chips is forgiving, fast, and produces a perfectly moist loaf with a tender crumb and melted chocolate in every bite. It’s the recipe that finally made banana bread easy and foolproof.

  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips, divided (¾ cup for batter, ¼ cup for topping)
  • ½ cup chopped walnuts or pecans (optional)
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides, or grease well with butter or non-stick spray.
  2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Pour the melted butter over the mashed bananas and stir until combined. Add the sugar, eggs, and vanilla extract. Whisk until smooth and glossy, just until streaks of egg disappear.
  4. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently with a wooden spoon or spatula until just combined. A few streaks of flour are fine; do not overmix.
  5. Fold in ¾ cup of the chocolate chips (and optional nuts or cinnamon if using) with a spatula until evenly distributed.
  6. Scrape the batter into the prepared loaf pan and spread into an even layer. Sprinkle the remaining ¼ cup chocolate chips on top.
  7. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil around the 40-minute mark.
  8. Let the bread cool in the pan for 10-15 minutes. Then, using the parchment overhang, lift the loaf out and transfer to a wire rack to cool completely before slicing (at least 30 minutes).

Notes

Use overripe bananas with brown spots for best sweetness and moisture. Do not overmix the batter once flour is added to avoid tough bread. Measure flour using the spoon-and-level method. For clean slices, let the bread cool completely. Store wrapped at room temperature for up to 4 days, or freeze for up to 3 months.
