  • 2 ¼ teaspoons active dry yeast (one packet)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • ½ cup baking soda (for boiling bath)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt or pretzel salt, for sprinkling
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 4 ounces cream cheese, softened to room temperature
  • ½ cup beer (lager or pilsner recommended)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika (smoked paprika optional)
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Add remaining 2 cups of flour, one cup at a time, stirring until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface. Knead for 6-8 minutes until smooth and elastic.
  4. Shape dough into a ball. Place in a lightly greased bowl, cover, and let rise in a warm spot for 45 minutes until doubled in size.
  5. Punch down dough. Divide into 4 equal pieces. Roll each into a 1-inch thick rope. Cut into 1-inch pieces. Place on a parchment-lined baking sheet, cover, and let rest for 15 minutes.
  6. Fill a large pot with 8 cups of water and bring to a rolling boil. Carefully add baking soda (it will bubble vigorously). Stir until dissolved.
  7. Preheat oven to 425°F (220°C).
  8. Drop 6-8 pretzel bites into boiling water. Boil for 30 seconds, flip, and boil another 30 seconds. Transfer back to baking sheet with slotted spoon.
  9. Brush each bite with egg wash. Sprinkle generously with coarse sea salt.
  10. Bake for 12-15 minutes until deep golden brown, rotating sheet halfway through.
  11. While pretzels bake, make the dip: In a small saucepan over medium-low heat, combine cream cheese and beer. Stir until melted and smooth (about 3 minutes).
  12. Reduce heat to low. Add shredded cheddar a handful at a time, stirring until melted. Add Dijon mustard, Worcestershire sauce, garlic powder, and paprika. Stir until smooth. Season with salt and pepper. Keep warm.

Don’t skip the boiling step—it creates the pretzel’s signature crust. Use a timer for the boil (30 seconds per side). Keep dough covered while resting to prevent drying.
