  • 1/4 cup brown sugar (packed)
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons unsalted butter (cold, cut into small cubes)

Instructions

  1. Preheat your oven to 350°F (175°C). Place two 8-ounce ramekins on a small baking sheet.
  2. Peel, core, and dice the apples into 1/2-inch cubes. Place in a medium mixing bowl.
  3. Add granulated sugar, brown sugar, cinnamon, nutmeg (if using), flour, and lemon juice to the apples. Stir to coat. Let sit for 5 minutes to macerate.
  4. Divide the apple mixture between the two ramekins, scraping all juices from the bowl. Dot the top of each with the small cubes of butter.
  5. In a small bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and cut in with a pastry cutter or fork until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  6. Sprinkle the crisp topping evenly over the apple filling in each ramekin. Do not press down.
  7. Bake for 25 to 30 minutes, until the topping is golden brown and the filling is bubbly around the edges. If topping browns too quickly, tent with foil for the last 5 minutes.
  8. Let cool on a wire rack for at least 5 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream.

Let the apples macerate for 5 minutes to draw out juices. Use cold butter for the topping to ensure a crispy texture. Always place ramekins on a baking sheet to catch spills. For best results, use old-fashioned rolled oats, not quick oats.
