  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 cup pearled barley
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 6 cups beef broth (low-sodium recommended)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 2 sprigs fresh thyme (or 1 teaspoon dried)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  1. Pat the beef cubes dry with paper towels. Season generously with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef in a single layer (work in batches if needed) and cook without moving for 3-4 minutes until a deep brown crust forms. Flip and brown the other sides. Transfer the browned beef to the slow cooker.
  2. Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the diced onion, carrots, and celery. Cook for 5-6 minutes, stirring occasionally, until the vegetables start to soften and the onion turns translucent. Add the minced garlic and cook for 1 more minute until fragrant. Scrape up any browned bits from the bottom of the pan.
  3. Stir in the tomato paste and cook for 2 minutes, stirring constantly, until it smells slightly sweet and savory.
  4. Pour about 1 cup of the beef broth into the skillet and stir, scraping up any remaining browned bits. Pour the entire mixture into the slow cooker with the beef.
  5. Add the remaining 5 cups of beef broth, the pearled barley, Worcestershire sauce, bay leaf, and thyme sprigs to the slow cooker. Stir everything together to combine. The liquid should cover the ingredients by about an inch—if it doesn’t, add a little more broth or water.
  6. Cover the slow cooker and cook on LOW for 7-8 hours or on HIGH for 4-5 hours. The soup is ready when the beef is fork-tender and the barley is plump and chewy.
  7. Remove the bay leaf and thyme sprigs. Taste the soup and adjust the salt and pepper as needed.
  8. Ladle the soup into bowls and garnish with fresh parsley if desired.

Notes

Don’t skip browning the beef—it’s essential for deep flavor. Barley absorbs a lot of liquid, so if the soup is too thick, add extra broth when reheating. For a leaner soup, refrigerate overnight and skim off solidified fat before reheating. Toasting the barley in a dry skillet for 2-3 minutes before adding adds a nutty depth. Do not lift the lid during cooking to maintain consistent temperature.
