This Cozy Crockpot Chicken Taco Soup is the ultimate comfort food for cold nights. It’s a dump-and-go recipe that delivers deep, complex flavor with tender shredded chicken, a smoky chipotle kick, and a bright lime finish, all made effortlessly in the slow cooker.

  • 1.5 lbs (about 680g) boneless, skinless chicken breasts
  • 15 oz (425g) can fire-roasted diced tomatoes
  • 10 oz (283g) can Rotel tomatoes with green chiles
  • 15 oz (425g) can black beans, drained and rinsed
  • 1 cup frozen or canned corn (drained if canned)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups (480ml) low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 chipotle pepper in adobo, minced, plus 1 teaspoon adobo sauce (optional)
  • Juice of 1 lime
  • Salt and black pepper to taste

Instructions

  1. Prep the aromatics: Dice the yellow onion and mince the garlic. Place them in the bottom of a 5-6 quart slow cooker.
  2. Add the canned goods: Pour in the fire-roasted diced tomatoes, Rotel with juices, drained black beans, and corn. Stir to combine.
  3. Season the base: Sprinkle chili powder, cumin, and smoked paprika over the vegetables. Add minced chipotle pepper and adobo sauce if using. Pour in chicken broth and stir again.
  4. Add the chicken: Nestle the chicken breasts into the liquid. Sprinkle with a little salt and pepper.
  5. Cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is tender and cooked through.
  6. Shred the chicken: Remove chicken to a cutting board and shred with two forks.
  7. Finish: Return shredded chicken to the soup. Squeeze in lime juice and stir. Taste and adjust salt and pepper as needed.
  8. Serve: Ladle into bowls and top with desired toppings.

Notes

For a richer flavor, sauté the onion and garlic in olive oil for 3-4 minutes before adding to the slow cooker. To thicken the soup, mash half a cup of black beans before adding. The soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
