Cozy Sausage and Sweet Potato Fall Soup – Easy One-Pot Recipe

A deeply savory, one-pot soup made with Italian sausage, sweet potatoes, and a herby broth. It comes together in about 40 minutes and is perfect for busy fall weeknights.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild, sweet, or hot)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cubed (about 4 cups of 1/2-inch cubes)
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained (fire-roasted preferred)
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish, optional)
  • Grated Parmesan cheese (for garnish, optional)
  • Crusty bread (for serving)

Instructions

  1. Heat the olive oil in a large Dutch oven or soup pot over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and cooked through, about 5-7 minutes. Leave about 1 tablespoon of fat in the pot.
  2. Reduce heat to medium. Add the diced onion and cook until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle the dried sage, dried thyme, smoked paprika, and red pepper flakes (if using) over the onion mixture. Stir constantly for about 30 seconds to bloom the spices.
  4. Add the cubed sweet potatoes and the can of diced tomatoes (with juices). Stir to coat the sweet potatoes.
  5. Pour in the chicken broth and add the bay leaf. Stir, scraping up any browned bits from the bottom of the pot.
  6. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, until the sweet potatoes are tender. For a thicker broth, simmer uncovered for the last 5 minutes.
  7. Remove the bay leaf and discard. Season with salt and black pepper to taste. If the soup tastes flat, add a squeeze of lemon juice or a splash of apple cider vinegar.
  8. Ladle into bowls and garnish with fresh parsley and Parmesan cheese if desired. Serve with crusty bread.

Notes

For a creamier soup, mash some sweet potato cubes against the side of the pot before serving. The soup tastes even better the next day. Freezes well for up to 3 months.
