These creamy apple cinnamon overnight oats are a quick, no-cook breakfast that takes just 5 minutes of prep. With grated and diced apples, Greek yogurt, and warm cinnamon, they deliver a naturally sweet, pudding-like texture that’s perfect for meal prep and busy mornings.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/2 cup (120g) plain Greek yogurt
  • 1 medium apple (about 180g), Honeycrisp, Fuji, or Gala recommended
  • 2 tablespoons (30ml) maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Optional toppings: chopped pecans or walnuts, extra diced apple, drizzle of maple syrup, sprinkle of cinnamon

Instructions

  1. Wash the apple. Cut in half, remove core and seeds, and leave skin on. Grate one half using a box grater (fine side). Dice the other half into small, bite-sized cubes (about 1/4 inch). Set aside.
  2. In a medium mixing bowl, combine 1 cup milk, 1/2 cup Greek yogurt, 2 tablespoons maple syrup, 1/2 teaspoon vanilla extract, and a pinch of salt. Whisk until smooth and fully combined.
  3. Pour 1 cup rolled oats and 1 teaspoon ground cinnamon into the bowl. Stir until every oat is coated and cinnamon is evenly distributed.
  4. Fold in both the grated apple and diced apple until evenly distributed.
  5. Spoon the mixture evenly into two pint-sized mason jars or airtight containers, leaving about 1/2 inch of space at the top. Screw lids on tightly.
  6. Refrigerate for at least 6 hours, but ideally 8-12 hours (overnight).
  7. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold, or microwave (lid off) for 45-60 seconds for warm oats. Top with optional toppings and eat immediately.

Notes

Grate half the apple and dice the other half for best texture. Don’t use quick oats—they turn mushy. A pinch of salt enhances flavor. Let oats sit at least 6 hours, but overnight is ideal. Stir before eating. Adjust sweetness based on apple variety. Store in fridge for up to 5 days. For dairy-free, use plant-based milk and yogurt. For gluten-free, use certified gluten-free oats.
