  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup (15 g) fresh cilantro, chopped
  • 2 tbsp (30 ml) lime juice
  • Optional toppings: shredded Monterey Jack cheese, sour cream, sliced avocado, tortilla chips, pickled jalapeños

Instructions

  1. Sauté the aromatics (optional but recommended): Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant. This step deepens the flavor, but if you’re in a rush, you can skip it and add the onion and garlic directly to the crockpot.
  2. Layer the ingredients in the slow cooker: Place the chicken breasts in the bottom of the crockpot. They don’t need to be perfectly arranged—just spread them out as best you can. Add the drained and rinsed white beans, the diced green chiles, the sautéed onion and garlic (or raw, if you skipped the skillet), and the spices (cumin, oregano, chili powder, salt, and pepper). Pour the chicken broth over everything. Do not stir yet—just let the ingredients settle.
  3. Cook on low or high: Cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours. The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. I prefer cooking on low because the chicken stays more tender, but high works in a pinch.
  4. Shred the chicken: Carefully remove the chicken breasts from the slow cooker and place them on a cutting board. Use two forks to shred the meat into bite-sized pieces. Alternatively, you can use a hand mixer right in the crockpot—just be careful not to overmix. Return the shredded chicken to the slow cooker.
  5. Add the cream cheese: Cut the softened cream cheese into small cubes and add them to the slow cooker. Stir gently until the cream cheese is fully melted and incorporated into the broth. This usually takes about 2-3 minutes. The chili will look thin at first, but it will thicken as the cream cheese melts. If you want an even creamier texture, you can whisk the cream cheese with a little warm broth before adding it to the pot. This prevents any lumps.
  6. Finish with lime and cilantro: Stir in the lime juice and half of the chopped cilantro. Taste and adjust seasoning if needed. The lime juice brightens everything and balances the richness of the cream cheese.
  7. Serve and garnish: Ladle the creamy crockpot white chicken chili into bowls and top with shredded Monterey Jack cheese, a dollop of sour cream, sliced avocado, and the remaining cilantro. Serve with tortilla chips or warm crusty bread on the side.

Notes

For a thicker chili, mash about half of the white beans with a fork before adding them to the crockpot. This releases their starch and naturally thickens the broth without needing any flour or cornstarch. If the chili is too thin, let it cook uncovered for an additional 15-20 minutes on high. Alternatively, stir in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water.
