These creamy peanut butter banana overnight oats come together in just 20 minutes with no overnight waiting required. Mashed banana, creamy peanut butter, and rolled oats create a velvety, pudding-like breakfast that’s perfect for meal prep or a quick morning treat.

  • 1 cup (90g) rolled oats
  • 1 large ripe banana, mashed (about ½ cup or 120g)
  • ¾ cup (180ml) milk (whole milk preferred)
  • 3 tablespoons (48g) creamy peanut butter
  • 12 tablespoons (15-30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • ½ teaspoon (2.5ml) vanilla extract
  • A tiny pinch of salt
  • Optional toppings: sliced banana, extra peanut butter drizzle, chopped peanuts, dark chocolate chips, cinnamon, coconut flakes

Instructions

  1. Mash the banana in a small bowl until mostly smooth with a few tiny lumps.
  2. Add the milk to the mashed banana and whisk until fully incorporated.
  3. Add the peanut butter and stir until mostly combined. If peanut butter is cold, microwave for 10 seconds first.
  4. Add honey or maple syrup, vanilla extract, and a pinch of salt. Stir until uniform. Taste and adjust sweetness if needed.
  5. Add rolled oats and chia seeds. Stir until every oat is coated.
  6. Transfer the mixture to a mason jar or airtight container, leaving about an inch of space at the top.
  7. Refrigerate for at least 20 minutes (or overnight) to allow oats to soften and chia seeds to plump.
  8. When ready to eat, stir well, add desired toppings, and enjoy cold or at room temperature.

Notes

For best texture, use old-fashioned rolled oats, not instant or steel-cut. Warm the peanut butter for easier mixing. Taste the milk mixture before adding oats to adjust sweetness. The oats can be eaten right away but are best after at least 20 minutes in the fridge. Store in the refrigerator for up to 5 days; add a splash of milk if too thick. Freeze for up to 3 months.
