  • 1 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ cups panko breadcrumbs
  • 2 tablespoons olive oil (or avocado oil spray)
  • ½ cup buffalo wing sauce (like Frank’s RedHot Original)
  • 2 tablespoons melted butter (or vegan butter)
  • 1 teaspoon honey (or maple syrup for vegan)
  • Ranch dressing or blue cheese dip (for serving, optional)
  • Celery sticks and carrot sticks (for serving, optional)
  • Fresh chives or parsley, chopped (for serving, optional)

Instructions

  1. Preheat your oven to 425°F (218°C). Line a large baking sheet with parchment paper or a silicone mat. If using a wire rack, place it on the sheet now.
  2. Wash the cauliflower head and pat it dry. Cut into bite-sized florets, about 1 to 1.5 inches each. You should have about 4-5 cups.
  3. In a medium bowl, whisk together the flour, milk, garlic powder, smoked paprika, salt, and pepper until smooth. The batter should be thick enough to coat the back of a spoon but still drip off.
  4. In a second bowl, combine the panko breadcrumbs and olive oil. Toss with your fingers until the oil is evenly distributed.
  5. Working in batches, drop a few florets into the batter. Use tongs to turn them until fully coated. Let excess batter drip off, then transfer to the panko bowl and toss gently to coat all sides. Place breaded florets on the prepared baking sheet in a single layer, leaving space between each piece.
  6. Bake at 425°F (218°C) for 20 minutes. Halfway through (at 10 minutes), flip each floret gently with tongs.
  7. While the cauliflower bakes, make the buffalo sauce. In a small saucepan over low heat, combine the buffalo wing sauce, melted butter, and honey. Stir until smooth and warm. Alternatively, microwave in a bowl for 30 seconds, stir, then another 15 seconds. Set aside.
  8. After the first 20 minutes, remove the cauliflower from the oven. Transfer the baked florets to a large bowl. Pour the buffalo sauce over them and toss gently until every piece is coated. Return the sauced florets to the baking sheet in a single layer.
  9. Bake for another 8-10 minutes, until the sauce has caramelized slightly and the edges look dark and sticky.
  10. Transfer to a serving platter. Sprinkle with chopped chives or parsley if using. Serve hot with ranch or blue cheese dip and celery sticks.

Notes

Pat cauliflower florets dry before battering to help the coating stick. Use a wire rack for extra crispy bottoms. Don’t rush the first bake—the initial 20 minutes without sauce builds structure.
