This crispy baked salmon with lemon garlic butter delivers a golden, crunchy crust and tender, buttery flesh in just 30 minutes. It’s an easy, impressive weeknight dinner that feels fancy without the fuss.

  • 4 salmon fillets (about 6 oz / 170g each)
  • 4 tablespoons unsalted butter (56g)
  • 1 large lemon (zest and juice)
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil.
  2. Pat salmon fillets completely dry with paper towels. Place skin-side down on the prepared baking sheet, spacing about an inch apart.
  3. In a small saucepan over low heat or in a microwave-safe bowl, melt the butter. Remove from heat and stir in lemon zest, minced garlic, olive oil, paprika, garlic powder, salt, and pepper.
  4. Pour the lemon garlic butter mixture evenly over the salmon fillets, coating the tops and sides.
  5. Bake on the middle rack for 12-15 minutes, until the salmon flakes easily and reaches 125-130°F (52-54°C) for medium-rare.
  6. Turn the oven to broil (high heat). Broil for 2-4 minutes, watching closely, until the top is deep golden brown and crispy.
  7. Remove from oven. Squeeze the juice from the remaining half lemon over the fillets. Let rest for 2-3 minutes. Sprinkle with fresh parsley and serve immediately.

Notes

Pat the salmon completely dry for the crispiest skin. Watch the broiler closely to prevent burning. Let the salmon rest for 2-3 minutes after cooking to redistribute juices.
