A quick, no-cook bento box lunch made with just five simple ingredients that picky eaters love. Perfect for school or park days, this cold lunch comes together in under five minutes and actually gets eaten.

  • 1/2 cup sharp cheddar cheese, cubed
  • 1/2 cup frozen peas, thawed
  • 1012 whole wheat crackers
  • 1/2 cup red grapes, washed and dried

Instructions

  1. Prep your chicken: Pull off the breast and dark meat from a rotisserie chicken, discard skin and bones, and cut into 1/2-inch bite-sized cubes.
  2. Cube the cheese: Cut sharp cheddar into cubes roughly the same size as the chicken pieces. Optionally use small cookie cutters to make fun shapes.
  3. Thaw the peas: Place frozen peas in a small strainer and run cool tap water over them for 30 seconds. Let them sit in the strainer while you prep the rest, then pat dry with a paper towel.
  4. Wash and halve the grapes: Rinse red grapes under cool water, pat completely dry, and cut each grape in half lengthwise.
  5. Assemble the bento box: In a bento-style container with compartments, arrange the chicken and cheese cubes in the largest section, place crackers in a single layer in the second compartment, and add peas and grape halves in the third compartment.
  6. Add a fun touch: If using cookie cutters, arrange the cheese shapes so they are visible when opened. Optionally add a small silicone cupcake liner for variety.
  7. Pack and chill: Close the lid securely and refrigerate if packing the night before, or place directly into a lunchbox with an ice pack for morning packing.

Notes

Keep everything dry to prevent soggy crackers. Prep ingredients the night before for faster assembly. Rotate cracker varieties to keep it interesting. For dairy-free, omit cheese or use dairy-free cheese cubes. For gluten-free, use gluten-free crackers.
