  • 8 large eggs, at room temperature
  • 2 cups (480ml) whole milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon fine sea salt

  • 1/4 teaspoon garlic powder
  • 6 cups (about 200g) cubed day-old bread (French, sourdough, or Texas toast)
  • 2 cups (225g) shredded sharp cheddar cheese
  • 1/2 cup (55g) shredded mozzarella or provolone cheese
  • 2 green onions, thinly sliced

Instructions

  1. Cook the sausage: Place a large skillet over medium-high heat. Add the breakfast sausage and cook, breaking it up with a spatula, until browned and cooked through (5-7 minutes). Let cool slightly.
  2. Prepare the baking dish: Grease a 9×13-inch baking dish with butter or non-stick spray.
  3. Layer the bread and sausage: Spread the cubed bread evenly in the dish. Sprinkle the cooked sausage over the bread.
  4. Make the egg custard: In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, salt, pepper, and garlic powder until smooth and slightly frothy.
  5. Pour and soak: Slowly pour the egg mixture evenly over the bread and sausage. Gently press the bread down into the liquid to ensure every cube is soaked.
  6. Add the cheese: Sprinkle the cheddar and mozzarella/provolone evenly over the top. Do not stir.
  7. Overnight rest (highly recommended): Cover the dish tightly with plastic wrap or foil and refrigerate for at least 4 hours, preferably 8-12 hours (overnight).
  8. Bake: Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit on counter for 15-20 minutes. Bake uncovered for 45-55 minutes, until top is golden brown and puffed, and center is set (slight jiggle like cheesecake). A knife inserted in center should come out clean.
  9. Rest and serve: Let casserole rest on a wire rack for 10-15 minutes before slicing. Sprinkle with sliced green onions just before serving.

Notes

For best texture, use day-old bread and let the casserole soak overnight. If using fresh bread, cube and toast at 350°F for 5-7 minutes to dry it out. Do not over-bake; tent with foil if top browns too quickly. Let rest before slicing for clean pieces.
