Tender, flaky pumpkin scones with a signature spiced glaze that crackles when you bite into it. This easy copycat recipe tastes better than Starbucks and comes together in under 40 minutes with simple pantry ingredients.

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon

  • 1/3 cup pumpkin puree
  • 1/3 cup heavy cream (plus extra for brushing)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 23 tablespoons milk or heavy cream
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, 1 teaspoon pumpkin pie spice, 1/2 teaspoon cinnamon, and salt.
  3. Cut cold butter into flour mixture using a pastry cutter or two forks until it resembles coarse sand with some pea-sized butter pieces.
  4. In a separate bowl, whisk together pumpkin puree, 1/3 cup heavy cream, egg, and 1 teaspoon vanilla until smooth.
  5. Pour wet ingredients into dry ingredients and stir until just combined. Dough should be shaggy with some dry spots.
  6. Turn dough onto a lightly floured surface. Gently bring together with hands, kneading 2-3 times. Pat into a 3/4-inch thick, 8-inch circle.
  7. Cut circle into 8 equal wedges. Transfer to prepared baking sheet, spacing 2 inches apart.
  8. Brush tops with extra heavy cream. Bake for 14-16 minutes until lightly golden on edges and a toothpick comes out clean.
  9. Cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  10. For glaze: whisk together powdered sugar, 2 tablespoons milk or cream, 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon cinnamon, and 1/4 teaspoon vanilla. Add remaining milk if needed for drizzling consistency.
  11. Once scones are completely cool, spoon glaze over tops. Let set for 15-20 minutes before serving.

Notes

Keep butter and ingredients cold for flaky scones. Do not overmix dough. For the double-glaze Starbucks effect, drizzle a second layer of plain powdered sugar glaze over the spiced glaze after it sets. Store unglazed scones in an airtight container for up to 3 days, or freeze unglazed for up to 3 months.
