Ingredients

Scale
  • 1 ½ pounds salmon fillets, skin removed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon onion powder
  • ½ cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons freshly squeezed lemon juice
  • 1 small garlic clove, minced
  • ¼ teaspoon salt
  • A pinch of black pepper

Instructions

  1. Pat the salmon dry with paper towels to remove as much moisture as possible.
  2. Cut the salmon into 1 ½-inch uniform cubes (about 20-24 bites).
  3. In a medium bowl, combine olive oil, garlic powder, paprika, salt, pepper, and onion powder. Add salmon bites and toss gently until evenly coated.
  4. Preheat the air fryer to 400°F for 3 minutes.
  5. Arrange salmon bites in a single layer in the air fryer basket, leaving space between each piece. Cook in batches if necessary.
  6. Air fry at 400°F for 4 minutes, then flip each piece with tongs. Cook for another 4-6 minutes until golden brown and flaky (internal temperature of 145°F).
  7. While salmon cooks, make the sauce: In a small bowl, combine Greek yogurt, chopped dill, lemon juice, minced garlic, salt, and pepper. Stir until smooth. Refrigerate until serving.
  8. Let salmon rest for 2 minutes after cooking.
  9. Serve immediately with lemon dill sauce on the side or drizzled over the top. Garnish with extra fresh dill and lemon wedges if desired.

Notes

Pat the salmon very dry for maximum crispiness. Do not overcrowd the air fryer basket; cook in batches if needed. For extra crispiness, broil for the last 2 minutes if baking instead. The sauce can be made up to 3 days ahead. Leftover salmon bites keep in the refrigerator for up to 3 days; reheat in the air fryer at 375°F for 3-4 minutes.
