This Easy Crockpot Beef and Bean Chili is a comforting, 5-ingredient dinner that requires zero hands-on time. Just dump everything in the slow cooker and let it work its magic for a rich, smoky, and satisfying meal.

Ingredients

Scale
  • 1 pound ground beef (80/20 preferred)
  • 2 cans (15 ounces each) kidney beans, drained and rinsed
  • 1 can (15 ounces) tomato sauce
  • 1 can (10 ounces) diced tomatoes with green chilies (e.g., Rotel)
  • 1 tablespoon chili powder
  • ½ teaspoon salt (optional)
  • ¼ teaspoon black pepper (optional)
  • 1 squeeze fresh lime juice (optional)

Instructions

  1. Prep your ingredients: Drain and rinse the kidney beans. Open the tomato sauce and diced tomatoes with green chilies. Measure out the chili powder.
  2. Layer everything in the crockpot: Add the ground beef, breaking it into chunks. Add the drained kidney beans, tomato sauce, and diced tomatoes with green chilies. Sprinkle the chili powder on top.
  3. Stir everything together until the beef is evenly distributed and the chili powder is dissolved.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Check for doneness: The beef should be cooked through and tender, and the beans soft but holding their shape. If the broth is too thin, leave the lid off for the last 30 minutes.
  6. Season to taste with salt, pepper, and a squeeze of fresh lime juice if desired.
  7. Serve hot with your favorite toppings.

Notes

For best flavor, use fresh chili powder and 80/20 ground beef. Do not lift the lid too often during cooking. Let the chili rest for 10 minutes before serving. Leftovers can be refrigerated for up to 5 days or frozen for up to 3 months.
