This easy crockpot buffalo chicken dip is the perfect game day appetizer. It’s creamy, spicy, and incredibly simple to make with just a few pantry-friendly ingredients.

  • 2 cups cooked, shredded chicken (about 2 cups)
  • 8 ounces cream cheese, softened to room temperature
  • 1 ½ cups shredded cheddar cheese
  • ½ cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 1 packet (about 1 ounce) ranch dressing mix
  • Optional: chopped green onions, crumbled blue cheese, extra buffalo sauce for garnish

Instructions

  1. Prep the chicken: If using rotisserie chicken, remove skin and bones, then shred the meat to get about 2 cups. If cooking from scratch, place two boneless, skinless chicken breasts in a pot, cover with water, bring to a boil, then simmer for 12-15 minutes until cooked through. Drain, cool slightly, and shred.
  2. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting. If forgotten, microwave unwrapped for 15-20 seconds on low power until soft but not melted.
  3. Combine in the crockpot: Add shredded chicken, softened cream cheese, shredded cheddar, buffalo sauce, and dry ranch dressing mix to the slow cooker. Stir to combine.
  4. Cook on low: Cover and cook on low for 2 to 3 hours. Stir after about an hour to help cream cheese melt evenly. The dip is ready when cream cheese is fully melted and dip is hot and bubbly around edges.
  5. Stir and adjust: Give the dip a final thorough stir. Taste and add more buffalo sauce for extra heat or a pinch of salt if needed (ranch mix adds plenty of salt).
  6. Serve: Switch slow cooker to warm setting. Garnish with chopped green onions and crumbled blue cheese if desired. Serve straight from crockpot with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

Don’t cook on high; low and slow prevents cream cheese from separating. Soften cream cheese to room temperature for smooth texture. Shred your own cheddar for best melting. If dip is too thick, stir in a tablespoon or two of milk or chicken broth. Can be assembled night before and refrigerated; add 30 minutes to cooking time. Freezes well for up to 3 months.
