  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 23 chipotle peppers in adobo sauce, minced, plus 2 tablespoons adobo sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup low sodium chicken broth
  • 2 bay leaves
  • 1 medium red onion, thinly sliced
  • ½ cup apple cider vinegar
  • ½ cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1216 small corn or flour tortillas
  • Optional toppings: crumbled cotija cheese, fresh cilantro, diced avocado, lime wedges, crema or sour cream, sliced radishes

Instructions

  1. Make the pickled onions: In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a boil over medium-high heat, stirring to dissolve. Place thinly sliced red onion in a mason jar or heatproof bowl. Pour hot vinegar mixture over onions. Let sit at room temperature for at least 30 minutes, then cover and refrigerate.
  2. Prep the slow cooker: Place diced onion and minced garlic in the bottom of a 6-quart slow cooker. Nestle chicken thighs on top. In a small bowl, mix fire-roasted tomatoes, minced chipotle peppers, adobo sauce, oregano, cumin, smoked paprika, salt, and pepper. Pour mixture over chicken. Add chicken broth and bay leaves. Do not stir.
  3. Cook low and slow: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and reaches 165°F internally.
  4. Shred the chicken: Remove bay leaves. Use two forks to shred chicken directly in the slow cooker. Stir shredded chicken into sauce. Taste and adjust seasoning.
  5. Optional but recommended broil: Spread shredded chicken mixture on a rimmed baking sheet in an even layer. Broil for 3-5 minutes until edges char and crisp. Watch closely.
  6. Warm tortillas: Warm tortillas directly over a gas flame or in a dry skillet over medium-high heat for about 30 seconds per side.
  7. Assemble and serve: Fill each tortilla with chicken tinga. Top with pickled onions and any other desired toppings. Serve immediately.

Notes

Do not skip the pickled onions—they provide essential acidity and crunch. Adjust chipotle peppers to taste. Broiling the shredded chicken adds a desirable charred texture. Shred chicken while warm for best results. The chicken tinga tastes even better the next day.
