Easy Crockpot Honey Garlic Chicken with Rice

Tender shredded chicken in a sticky, sweet-savory honey garlic sauce, slow-cooked to perfection and served over rice. A dump-and-go dinner that tastes like you spent hours on it.

  • 2 pounds (900g) boneless, skinless chicken thighs
  • ½ cup (170g) honey
  • ⅓ cup (80ml) low-sodium soy sauce
  • 45 cloves garlic, minced (about 2 tablespoons)
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water
  • Cooked white rice for serving
  • Green onions and sesame seeds for garnish

Instructions

  1. Trim any visible fat from the chicken thighs and place them in a single layer at the bottom of the crockpot.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, and sesame oil. Taste and adjust sweetness or saltiness as desired.
  3. Pour the sauce evenly over the chicken, turning pieces to coat. Scrape every last drop from the bowl.
  4. Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until chicken is fork-tender and easily shreddable.
  5. Remove chicken to a cutting board or bowl and shred with two forks into bite-sized pieces.
  6. In a small bowl, mix cornstarch with cold water until smooth. Pour into the remaining sauce in the crockpot and stir. Turn heat to HIGH and simmer uncovered for 10-15 minutes until sauce thickens and becomes glossy.
  7. Return shredded chicken to the crockpot and stir to coat in the thickened sauce. Let sit for 5 minutes.
  8. Serve over hot cooked rice and garnish with green onions and sesame seeds.

Notes

Don’t lift the lid during cooking—it adds 20 minutes each time. Pat chicken dry for better sauce cling. Low-sodium soy sauce is recommended to control saltiness. The cornstarch slurry is essential for thickening; don’t skip it. For frozen chicken, add an extra hour to cooking time. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
