  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup (80ml) honey
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar (unseasoned)
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas, trimmed
  • 3 green onions, sliced (white and green parts separated)
  • 1 tablespoon sesame seeds, for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Pat the shrimp dry with paper towels. In a medium bowl, toss them with cornstarch, salt, and pepper until evenly coated. Set aside.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Set aside. In a separate tiny bowl, mix the cornstarch and water for the slurry.
  3. Place your skillet or wok over high heat and add 1 tablespoon of vegetable oil. Let it get shimmering hot.
  4. Add the shrimp in a single layer (work in batches if needed). Cook for 1-2 minutes per side, until pink and lightly golden. Remove the shrimp to a plate and set aside.
  5. Add the remaining 1 tablespoon of oil to the pan. Toss in the bell pepper and snap peas. Stir fry for 2-3 minutes, until bright and slightly tender. Add the white parts of the green onions and cook for 30 seconds more.
  6. Return the shrimp to the pan. Pour the honey garlic sauce over everything. Stir well to coat. Let it bubble for about 1 minute.
  7. Give your cornstarch slurry a quick stir and pour it into the pan. Stir constantly for 30-60 seconds until the sauce thickens and becomes glossy.
  8. Remove from heat. Sprinkle with the green parts of the green onions and sesame seeds. Serve immediately over rice or noodles.

Notes

Pat shrimp dry thoroughly for crispy coating. Don’t overcrowd the pan; cook shrimp in batches if needed. Have all ingredients prepped before starting (mise en place). Watch garlic carefully to avoid burning. Taste sauce and adjust sweetness or tanginess as desired. For best texture, serve immediately.
