  • 1 tablespoon whole grain mustard
  • 1 teaspoon apple cider vinegar

Instructions

  1. In a large mixing bowl, combine warm water, honey, and active dry yeast. Let sit for 5-10 minutes until foamy.
  2. Add melted butter, salt, and 1 cup of flour to the yeast mixture. Stir until combined. Gradually add remaining 1 ½ cups flour, stirring until a shaggy dough forms.
  3. Knead the dough on a lightly floured surface for 8-10 minutes (or use a stand mixer with dough hook for 5-6 minutes) until smooth and elastic.
  4. Shape dough into a ball and place in a lightly greased bowl. Cover with a towel and let rise in a warm place for 45-60 minutes until doubled in size.
  5. Punch down the dough and divide into 4 equal pieces. Roll each piece into a 12-inch long rope, then cut into 1-inch pieces.
  6. Bring 6 cups of water to a boil in a large pot. Add ¼ cup baking soda carefully. Reduce heat to a gentle simmer.
  7. Working in batches of 6-8 bites, drop them into the simmering water for 20-30 seconds, flipping halfway. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  8. Preheat oven to 450°F (232°C). Brush pretzel bites with melted butter and sprinkle with coarse sea salt.
