Easy Mini Peach Cobbler Skillets: Best Labor Day Dessert

Personal-sized peach cobblers with a golden biscuit topping, made in mini cast iron skillets. A nostalgic, crowd-pleasing dessert perfect for Labor Day or any summer gathering.

  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

  • 3 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 tablespoons cold unsalted butter, cut into small cubes
  • ¼ cup buttermilk
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar

Instructions

  1. Preheat oven to 375°F (190°C). Place mini skillets on a baking sheet.
  2. Make the brown sugar butter base: Place 2 tablespoons butter and 2 tablespoons brown sugar in each mini skillet. Place skillets on baking sheet and heat in oven for about 5 minutes until butter melts and bubbles.
  3. Prepare the peach filling: Toss sliced peaches with ¼ cup granulated sugar, 1 tablespoon cornstarch, 1 teaspoon vanilla, ½ teaspoon cinnamon, and a pinch of salt. Stir gently and let sit while making topping.
  4. Make the biscuit topping: In a medium bowl, whisk together ¾ cup flour, 3 tablespoons sugar, 1 teaspoon baking powder, and ¼ teaspoon salt. Add cold butter cubes and cut in with a pastry cutter or fingertips until mixture resembles coarse meal with pea-sized butter pieces. Stir in ¼ cup buttermilk just until dough comes together (shaggy and sticky).
  5. Assemble the skillets: Remove skillets from oven. Divide peach mixture evenly among skillets, spooning over melted butter-sugar base. Drop spoonfuls of biscuit dough on top, leaving some peaches exposed. Sprinkle extra sugar on top if desired.
  6. Bake for 18-22 minutes until biscuit topping is golden brown and filling is bubbling around edges. Let cool on wire rack for at least 10 minutes before serving.

Notes

Don’t skip browning the butter in the oven for nutty flavor. Don’t overmix biscuit dough. Let filling bubble vigorously at edges to ensure cornstarch thickens properly. Place skillets on baking sheet to catch overflow. For gluten-free, use 1:1 gluten-free flour blend with xanthan gum. For dairy-free, use cold vegan butter and unsweetened almond milk with lemon juice.
