  • 1 (14.3 oz) package Oreo cookies (regular, not Double Stuf)
  • 8 oz cream cheese, softened (full-fat, block-style)
  • 12 oz white melting wafers or white chocolate chips
  • 1 tbsp coconut oil or shortening (optional)
  • Candy eyeballs (flat-bottomed, about 30-40 pieces)
  • Red food coloring gel (optional)
  • Black food coloring gel (optional)

Instructions

  1. Crush the Oreos: Place the entire package of Oreos (filling included) into a food processor. Pulse until you have fine, uniform crumbs (like dark sand).
  2. Mix the filling: In a large mixing bowl, beat the softened cream cheese until smooth and fluffy (about 2 minutes). Add the Oreo crumbs and mix until fully combined. The mixture should look like dark, fudgy dough and hold together when pressed.
  3. Form the truffles: Scoop out about 1 tablespoon of the mixture and roll it between your palms to form a smooth ball. Place each ball on a parchment-lined baking sheet. You should get about 30-35 truffles.
  4. Chill the truffles: Place the baking sheet in the refrigerator for at least 30 minutes, or up to 2 hours.
  5. Melt the white chocolate: Place the white melting wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely smooth. Add the coconut oil if using, and stir until incorporated.
  6. Dip the truffles: Remove the truffles from the fridge. Using a fork or dipping tool, lower one truffle into the melted white chocolate. Gently tap the fork against the bowl to remove excess chocolate. Place the coated truffle back on the parchment paper. Work quickly, doing 5 at a time.
  7. Add the candy eyes: While the chocolate is still wet, press a candy eyeball onto the top of each truffle. Press gently so it sticks but doesn’t sink.
  8. Create the bloodshot details: Once all truffles are dipped and eyes are attached, let them set completely (about 15 minutes at room temperature or 5 minutes in the fridge). Using a toothpick or small piping bag, add thin red lines radiating from the candy eye to look like bloodshot veins. Add a tiny black dot in the center of the eye to dilate the pupil. Let the details set for another 10 minutes.
  9. Final chill: Refrigerate the finished truffles for at least 30 minutes before serving.

Use full-fat cream cheese for best texture. Keep undipped truffles in the fridge while working. White chocolate is sensitive to heat; microwave in short bursts. These truffles freeze well for up to 3 months. For gluten-free, use gluten-free sandwich cookies.
