  • 1 cup pumpkin puree (100% pure pumpkin)
  • 1 cup milk (any kind)
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 1/3 cup pure maple syrup
  • 2 large eggs, room temperature
  • 2 tablespoons coconut oil, melted (or melted butter)
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup chocolate chips (optional)
  • 1/3 cup chopped pecans or walnuts (optional)
  • 1/4 cup dried cranberries (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or line with paper liners. Spray liners lightly.
  2. In a large bowl, whisk together rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt.
  3. In a separate medium bowl, whisk together pumpkin puree, milk, Greek yogurt, maple syrup, eggs, melted coconut oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients. Fold gently with a spatula until just combined. Do not overmix. If using mix-ins, fold them in now.
  5. Divide batter evenly among the 12 muffin cups. Fill each cup to the top and press down gently to pack the mixture.
  6. Bake for 18-22 minutes, or until tops are golden brown and a toothpick inserted in the center comes out clean.
  7. Let oatmeal cups cool in the pan for 10 minutes. Then transfer to a cooling rack and cool completely before storing.

Notes

Do not skip the cooling time in the pan. Use room temperature eggs. Press the mixture down firmly in the muffin cups. Line the pan even if it is non-stick. Let cool completely before storing. Toast oats first for extra flavor (optional).
