  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon kosher salt
  • 1 tablespoon pure vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1/4 cup water

Instructions

  1. Wash apples thoroughly. Cut each apple in half through the stem, then into quarters. Remove the core and seeds from each quarter. Chop each quarter into roughly 1-inch chunks.
  2. Place the chopped apples into a 5- to 6-quart slow cooker. Add granulated sugar, brown sugar, cinnamon, nutmeg, cloves, salt, vanilla extract, lemon juice, and water. Stir until apples are evenly coated.
  3. Cover and cook on low for 10 hours, until apples are very soft and dark amber. Stir once after about 4 hours if possible.
  4. Turn off the slow cooker and let the mixture cool for about 10 minutes. Use an immersion blender to puree until smooth (or leave slightly chunky if desired). If using a countertop blender, let cool 15 minutes, then blend in batches with lid slightly ajar.
  5. If the apple butter is too thin, turn slow cooker to high and simmer with lid off for 30-60 minutes, stirring occasionally, until desired thickness.
  6. Taste and adjust seasoning if needed (e.g., more cinnamon, salt, or vanilla).
  7. Let apple butter cool to room temperature. Ladle into clean jars, leaving 1/2 inch headspace. Wipe rims, screw on lids, and refrigerate. Apple butter thickens as it cools.

Notes

For thicker apple butter, simmer with lid off after blending. Flavor improves after 24 hours in the fridge. Use a mix of sweet and tart apples for best flavor. Don’t open the lid too often during cooking.
