Instructions

  1. Prep the ingredients: Peel and cube potatoes into 1-inch pieces. Dice the onion. Mince the garlic. Slice the smoked sausage into rounds, about 1/2 inch thick.
  2. Layer in the slow cooker: Add cubed potatoes, diced onion, and minced garlic to the slow cooker. Place sliced sausage on top. Do not stir yet.
  3. Add the seasonings: Sprinkle dried thyme, smoked paprika, and a generous pinch of black pepper over the top. Hold off on salt for now.
  4. Pour in the broth: Slowly pour chicken broth over everything. Give a gentle stir to combine.

  6. Thicken the broth (optional but recommended): About 30 minutes before serving, use a potato masher to gently mash some of the potatoes in the slow cooker, breaking up about one-third of them to thicken the broth.
  7. Add the dairy and butter: Stir in milk (or half-and-half) and butter. Cook for another 15-20 minutes on LOW until heated through and butter melts. Do not let it boil.
  8. Taste and adjust: Add salt if needed (start with 1/2 teaspoon) and adjust pepper. Garnish with fresh parsley if desired. Serve hot with crusty bread or crackers.
