Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 20 minutes before starting, or microwave in 10-second bursts until soft but not warm.
  2. Mix the spread: In a small bowl, combine softened cream cheese with dry ranch dressing mix until completely combined.
  3. Prepare your workspace: Lay a large flour tortilla flat on a cutting board. If cold, microwave for 10 seconds to warm.
  4. Spread the cream cheese: Using a spatula or butter knife, spread a thin, even layer of cream cheese mixture across the entire tortilla, leaving a half-inch border.
  5. Layer the turkey: Place turkey slices evenly over the cream cheese, overlapping slightly. Add lettuce if using.
  6. Add the cheese: Lay cheddar slices over the turkey, overlapping slightly.
  7. Roll it tight: Starting from one edge, roll the tortilla as tightly as possible without tearing, keeping filling tucked in. Press seam to seal.
  8. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap, twisting ends like a candy wrapper. Refrigerate for at least 30 minutes (1 hour is better).
  9. Slice and serve: After chilling, unwrap and slice into 1-inch thick pinwheels using a sharp knife with a gentle sawing motion. You should get 8-10 pinwheels per tortilla.
  10. Pack for lunch: Arrange pinwheels in a lunchbox or container. They stack well with parchment paper between layers if needed.
