  • 4 large flour tortillas (burrito size, about 10 inches)
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) dry ranch seasoning mix
  • ½ cup shredded cheddar cheese
  • 810 slices deli turkey breast
  • 1 cup fresh spinach leaves
  • Optional: ¼ cup finely chopped red bell pepper or sun-dried tomatoes

Instructions

  1. In a medium bowl, combine the softened cream cheese and dry ranch seasoning mix. Mix until completely smooth and well combined. If adding chopped red bell pepper or sun-dried tomatoes, fold them in now.
  2. Lay one large flour tortilla flat on a cutting board. If tortillas are stiff or cracking, microwave them for 10-15 seconds to make them pliable.
  3. Using a spatula or the back of a spoon, spread a generous, even layer of the ranch cream cheese mixture over the entire surface of the tortilla, going all the way to the edges.
  4. Place 2-3 slices of deli turkey flat over the cream cheese layer, overlapping them slightly to cover the entire tortilla.
  5. Lay a single, even layer of fresh spinach leaves over the turkey. Press them down gently so they stick to the cream cheese.
  6. Starting from one edge, roll the tortilla up tightly, using your fingers to keep the filling tucked in as you go. Roll it like a tight cigar—firm but not so tight that the filling squeezes out the ends.
  7. Wrap the rolled tortilla tightly in plastic wrap, twisting the ends to secure it. Refrigerate for at least 30 minutes, or up to 4 hours.
  8. Unwrap the chilled roll and place it on a cutting board. Using a sharp knife, slice the roll into 1-inch thick pinwheels using a sawing motion. You should get about 8-10 pinwheels per tortilla.
