A creamy, tangy chicken salad made with Greek yogurt, sweet grapes, crunchy pecans, and tender chicken, served in crisp butter lettuce cups. Perfect for a quick lunch or meal prep.

Ingredients

  • 3 cups cooked chicken breast, shredded or diced
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 2 stalks celery, finely diced
  • 1 cup red grapes, halved
  • 1/2 cup pecans, chopped and toasted
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh dill, chopped
  • Salt and black pepper to taste
  • Butter lettuce leaves for serving

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3-4 minutes until fragrant and lightly golden. Set aside to cool.
  2. If using rotisserie chicken, remove skin and shred meat into bite-sized pieces. You should have about 3 cups.
  3. Finely dice the celery and halve the red grapes lengthwise.
  4. In a large mixing bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, and chopped dill. Season with salt and pepper.
  5. Add shredded chicken, diced celery, halved grapes, and cooled toasted pecans to the bowl. Fold gently until everything is coated.
  6. Cover and refrigerate for at least 30 minutes to let flavors meld (optional but recommended).
  7. Wash and dry butter lettuce leaves, separating them gently.
  8. Spoon about 1/4 cup of chicken salad into each lettuce cup just before serving. Serve immediately.

Notes

For best results, toast the pecans and let the chicken salad chill for at least 30 minutes. Store chicken salad and lettuce separately for meal prep. The salad keeps in the fridge for up to 4 days.
