A warm, cheesy spinach artichoke dip baked inside a hollowed-out sourdough bread bowl, perfect for game day gatherings. This crowd-pleasing appetizer is easy to make and serves as an edible centerpiece.

  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 14 oz canned artichoke hearts, drained and roughly chopped
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 1 large round sourdough or Italian bread loaf (about 1 lb)
  • 2 tablespoons melted butter
  • ½ teaspoon garlic powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Thaw frozen spinach completely and squeeze dry using a kitchen towel.
  3. In a large bowl, beat together cream cheese, sour cream, and mayonnaise until smooth.
  4. Add minced garlic, salt, black pepper, and red pepper flakes (if using); stir to combine.
  5. Fold in squeezed spinach, chopped artichoke hearts, 1 cup mozzarella, and all Parmesan until evenly mixed.
  6. Cut a circle (3-4 inches) out of the top of the bread loaf, about 2 inches deep. Remove the top piece and hollow out the interior, leaving a ½-inch thick wall. Reserve removed bread pieces.
  7. Mix melted butter with garlic powder. Brush the inside of the bread bowl and the top piece with the garlic butter.
  8. Spoon the dip mixture into the bread bowl, packing it firmly and mounding slightly.
  9. Sprinkle remaining ½ cup mozzarella over the top.
  10. Place filled bread bowl and top piece (buttered side up) on a lined baking sheet.
  11. Bake for 20-25 minutes, until dip is hot and bubbly and cheese is melted and golden.
  12. While baking, cut reserved bread pieces into 1-inch cubes. Toss with olive oil or melted butter and salt, then spread on baking sheet around the bread bowl for the last 10 minutes of baking.
  13. Let rest for 5 minutes before serving. Place bread bowl on a platter with toasted bread cubes and additional dippers.

Notes

Squeeze spinach thoroughly to avoid watery dip. Use room temperature cream cheese for smooth texture. Choose a sturdy bread like sourdough. Dip can be assembled up to 24 hours in advance (add 5-10 minutes to baking time if cold).
