  • 3 cups (450g) cooked chicken breast, shredded or chopped
  • 1 cup (240g) plain Greek yogurt (full-fat or 2%)
  • 1 cup (150g) red grapes, halved
  • 23 stalks celery, finely diced (about 1/2 cup)
  • 1/2 cup (60g) slivered almonds, toasted
  • 34 stalks green onion, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 12 teaspoons honey
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried)
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1/2 cup diced apple, such as Honeycrisp or Fuji (optional)
  • 1/4 cup dried cranberries (optional)
  • 1 teaspoon fresh tarragon, chopped (optional)

Instructions

  1. If using rotisserie chicken, remove skin and shred meat with two forks or your hands into bite-sized pieces. If cooking from scratch, season chicken breasts with salt and pepper, poach in simmering water or chicken broth for 12-15 minutes until cooked through, then shred or chop. Let warm chicken sit at room temperature for 10 minutes before mixing.
  2. Heat a small skillet over medium heat. Add slivered almonds and cook, stirring frequently, until golden and fragrant (2-3 minutes). Pour onto a plate to cool.
  3. In a small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, honey, salt, pepper, and dill. Taste and adjust seasoning as needed.
  4. Halve grapes lengthwise. Dice celery into small, even pieces (about 1/4 inch). Thinly slice green onions, using both white and green parts. Chop any optional add-ins.
  5. In a large mixing bowl, combine shredded chicken, halved grapes, diced celery, sliced green onions, and cooled toasted almonds. Pour dressing over top and stir gently until evenly coated.
  6. Cover bowl and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve cold or at room temperature. For meal prep, add almonds just before serving to maintain crunch.

Notes

For best flavor, chill for at least 30 minutes before serving. Almonds will soften if stored overnight; add them just before serving for crunch. If yogurt has liquid on top, drain it off to prevent watery salad. Do not overmix to avoid mushy texture. Taste for seasoning before chilling—cold food needs slightly more salt.
