Instructions

  1. Make the Ranch Dip: In a small mixing bowl, combine the Greek yogurt and lemon juice. Stir well. Add dried dill, dried parsley, garlic powder, onion powder, salt, and black pepper. Whisk until smooth and herbs are evenly distributed. Let sit for at least 10 minutes to allow herbs to rehydrate.
  2. Prepare the Veggie Cups: Wash and dry all vegetables. For mini bell peppers, slice off the top quarter (stem end) and remove seeds and white membranes to create clean cups. Cut cucumber into ½-inch thick rounds or half-moons. Cut carrots and celery into 2-3 inch sticks, ½-inch thick. Break broccoli and cauliflower into bite-sized florets. Halve cherry tomatoes if large.
  3. Assemble the Cups: Using a small spoon or piping bag, fill each mini bell pepper cup about three-quarters full with the ranch dip. Do not overfill.
  4. Arrange the Veggies: Place filled pepper cups on a serving platter. Arrange cucumber rounds, carrot sticks, celery sticks, broccoli florets, cauliflower florets, and cherry tomatoes around the cups in a circular pattern.
