Healthy Turkey Taco Lettuce Wraps: Easy 15-Minute Recipe

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 tablespoon lime juice
  • 1 head butter lettuce or iceberg lettuce
  • Optional toppings: diced avocado, pico de gallo, shredded cheese, sour cream or Greek yogurt, fresh cilantro, diced jalapeño, hot sauce

Instructions

  1. Prep your ingredients first (5 minutes): Dice the onion, mince the garlic, and measure out all your spices into a small bowl.
  2. Heat the oil (30 seconds): Add the olive oil to your skillet over medium-high heat. Let it shimmer before adding the onion.
  3. Sauté the onion (3 minutes): Add the diced onion and cook until translucent, stirring occasionally.
  4. Add the garlic (30 seconds): Toss in the minced garlic and stir constantly for about 30 seconds.
  5. Brown the turkey (5-6 minutes): Add the ground turkey to the pan. Break it up into crumbles. Let it cook undisturbed for about 2 minutes to get some browning, then stir. Cook until no pink remains.
  6. Add the spices (1 minute): Sprinkle the chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper over the meat. Stir well and let cook for about a minute to toast the spices.
  7. Add broth and tomato paste (3 minutes): Pour in the chicken broth and add the tomato paste. Stir until dissolved and let simmer for about 3 minutes until slightly reduced.
  8. Finish with lime juice (30 seconds): Remove from heat. Squeeze in the fresh lime juice and stir. Taste and adjust seasoning.
  9. Prepare the lettuce cups (2 minutes): Carefully peel off large outer leaves from the head of lettuce. Rinse gently and pat dry. Trim any thick stem pieces if needed.
  10. Assemble and serve: Arrange lettuce cups on a platter. Spoon warm turkey filling into each cup. Top with desired toppings and serve immediately.

Notes

For meal prep, store the filling and lettuce separately. The filling keeps in the fridge for up to 4 days. Reheat with a splash of broth. Do not assemble wraps ahead of time to avoid soggy lettuce. For best results, keep lettuce cold until serving.
