These homemade iced oatmeal cookies are packed in mason jars for a thoughtful teacher appreciation gift. The cookies are soft, chewy, and topped with a simple vanilla icing that sets firm for easy stacking.

  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 2 cups powdered sugar, sifted
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper. Take butter and eggs out of fridge 30 minutes before starting.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes with an electric mixer on medium speed. Scrape down sides halfway through.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add dry mixture to wet ingredients, mixing on low speed just until combined.
  5. Stir in rolled oats with a spatula until evenly distributed. Cover bowl with plastic wrap and let rest at room temperature for 20 minutes.
  6. Using a cookie scoop, portion dough into 1.5-tablespoon balls and place 2 inches apart on prepared baking sheets. Bake for 10-12 minutes, until edges are golden brown and centers look slightly underdone.
  7. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. In a small bowl, whisk together sifted powdered sugar, milk, vanilla extract, and salt until smooth. Consistency should be thick but spreadable.
  9. Dip top of each cooled cookie into icing, letting excess drip off. Place on wire rack over parchment paper. Let icing set for about 30 minutes at room temperature until firm.
  10. Layer cookies carefully in clean mason jars (about 6-8 per pint jar). Add ribbon around jar neck and attach gift tag.

Notes

Let dough rest for 20 minutes before baking for best texture. If kitchen is warm, chill dough balls for 15 minutes before baking to prevent spreading. Make icing while cookies cool. Cookies taste even better the day after baking.
