  • 4 cups (960 ml) whole milk
  • 1 cup (240 g) canned pumpkin puree (100% pure, not pumpkin pie filling)
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) packed brown sugar
  • 4 chai tea bags (black tea-based, like Twinings or Tazo)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. In a medium saucepan, whisk together the whole milk, pumpkin puree, granulated sugar, and brown sugar until fully incorporated and no orange streaks remain.
  2. Stir in the ground cinnamon, ginger, cardamom, cloves, nutmeg, and salt. Whisk to distribute evenly.
  3. Place the saucepan over medium heat and bring to a gentle simmer (small bubbles around the edges). Do not boil. Stir occasionally.
  4. Once simmering, reduce heat to low. Add the chai tea bags, submerging them fully. Let steep for 5 to 7 minutes, stirring once or twice. Do not exceed 10 minutes to avoid bitterness.
  5. Remove the tea bags using tongs or a fork, gently squeezing them against the side of the pot to extract liquid. Discard the bags.
  6. Stir in the vanilla extract off the heat.
  7. For an ultra-smooth concentrate, pour through a fine-mesh strainer into a glass jar. Otherwise, pour directly.
  8. Let the concentrate cool to room temperature (about 30 minutes), then seal and refrigerate. It will thicken slightly as it chills.

Notes

Watch the heat to avoid scorching the milk. Do not over-steep the tea (set a timer for 5-7 minutes). Let milk come to room temperature before whisking in pumpkin to avoid lumps. The concentrate keeps for up to 7 days in the fridge; shake before use. Double the batch for a crowd.
