No-Bake Red, White & Blue Strawberry Icebox Cake: Easy Summer Dessert

A no-bake strawberry icebox cake that is perfect for summer gatherings, featuring layers of creamy filling, fresh strawberries, blueberries, and graham crackers. It’s a festive, crowd-pleasing dessert that requires no oven time.

  • 2 cups heavy whipping cream (cold)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese (softened)
  • 2 cups fresh strawberries (hulled and sliced into thin rounds)
  • 1 cup fresh blueberries (rinsed and patted dry)
  • 1 tablespoon granulated sugar (optional, for macerating berries)
  • 1 box (about 14 ounces) graham crackers (about 2 full sleeves)
  • Fresh mint leaves (optional garnish)
  • Additional berries (optional garnish)
  • White chocolate shavings (optional garnish)

Instructions

  1. In a large chilled bowl, beat the heavy cream with an electric mixer on medium-high speed until soft peaks form, about 3-4 minutes.
  2. In a separate bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and fluffy, about 2 minutes.
  3. Gently fold the whipped cream into the cream cheese mixture using a spatula until light and mousse-like.
  4. If strawberries are not super sweet, toss them with 1 tablespoon of sugar and let sit for 10 minutes. Drain off excess liquid before layering.
  5. Spread a thin layer (about 1/4 cup) of the cream mixture on the bottom of a 9×13 inch baking dish.
  6. Arrange a single layer of graham crackers over the cream, breaking as needed to fit.
  7. Spread about 1/3 of the remaining cream mixture evenly over the graham crackers.
  8. Arrange half of the sliced strawberries in a single layer over the cream.
  9. Add another layer of graham crackers, followed by another 1/3 of the cream mixture. Scatter the blueberries evenly over the cream.
  10. Add a third layer of graham crackers and the remaining cream mixture.
  11. Arrange the remaining strawberry slices and a few extra blueberries on top in a decorative pattern.
  12. Cover tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  13. Slice and serve cold, straight from the fridge. Garnish with fresh mint if desired.

Notes

For best results, chill the cake overnight. Use a sharp knife dipped in hot water for clean slices. The cake can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.
