  • 8 ounces pasta (fettuccine, pappardelle, penne, or rigatoni)
  • 1 cup freshly grated Parmesan cheese
  • 3 cups fresh spinach, roughly chopped
  • 4 cloves garlic, minced
  • 1 medium yellow onion, finely diced
  • 1 teaspoon dried Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Prep your ingredients: slice chicken, chop sun-dried tomatoes, mince garlic, dice onion, grate Parmesan.
  2. Heat 1 tablespoon olive oil in a large Dutch oven over medium-high heat. Add chicken in a single layer, season with salt, pepper, and a pinch of Italian seasoning. Cook 3-4 minutes per side until golden and cooked through. Transfer to a plate.
  3. Reduce heat to medium. Add remaining 1 tablespoon olive oil. Sauté onion for 3 minutes until soft. Add garlic and cook 30 seconds until fragrant.
  4. Stir in sun-dried tomatoes and remaining Italian seasoning. Cook 1 minute. Pour in chicken broth, scraping up browned bits from the bottom of the pot.
  5. Add heavy cream and stir to combine. Bring to a gentle simmer. Add pasta, pushing it down to submerge. Cover and simmer 10-12 minutes, stirring occasionally, until pasta is al dente.
  6. Stir in spinach until wilted (about 1 minute). Return chicken and any juices to the pot. Stir gently.
  7. Remove from heat. Sprinkle in Parmesan and stir until melted and sauce is thick and creamy. Adjust seasoning with salt, pepper, and red pepper flakes if desired.
  8. Let rest 2-3 minutes before serving. Garnish with fresh parsley or basil and extra Parmesan. Serve hot.

Cook pasta to al dente (1-2 minutes less than package directions) as it continues to cook in the sauce. Use room temperature cream and Parmesan for smoother melting. Keep heat at a gentle simmer to prevent cream from curdling. Deglaze the pot after searing chicken to incorporate flavor from browned bits. Leftovers keep in the refrigerator for up to 3 days; reheat on the stovetop with a splash of milk or broth.
