Ingredients

Scale
  • 8 ounces Brie or Camembert, at room temperature
  • 6 ounces Aged Gouda, sliced into thin wedges
  • 6 ounces Sharp Cheddar, cubed
  • 4 ounces Goat Cheese Log, plain or with herbs
  • 1 cup Candy Corn
  • 4 ounces Dark Chocolate Squares (70% cacao), broken into pieces
  • 1 cup Caramel Popcorn
  • 2 tablespoons Honey or Maple Syrup
  • 45 Clementines, peeled and separated into segments
  • 1 cup Green Grapes, washed and dried
  • ½ cup Dried Apricots
  • 1 cup Salted Mixed Nuts (almonds, cashews, pecans)
  • 4 ounces Prosciutto, thinly sliced
  • ½ cup Mixed Olives (kalamata and green), optional
  • 1 sleeve Water Crackers
  • 1 cup Pretzel Sticks
  • 1 small Baguette, sliced into thin rounds and lightly toasted (optional)

Instructions

  1. Prep Your Ingredients (5 minutes): Take the brie and goat cheese out of the fridge 30 minutes before assembling. Wash and dry the clementines and grapes. Peel the clementines and separate them into segments. Slice the aged gouda and sharp cheddar into thin wedges or cubes. Break the dark chocolate into small pieces. If using a baguette, slice it and toast lightly in a 350°F oven for 5-7 minutes.
  2. Position the Cheese First (2 minutes): Place the brie wheel in the center-left of your board. Put the goat cheese log in the upper-right corner. Arrange the gouda and cheddar wedges around them, leaving space between each type.
  3. Add the Bowls (1 minute): Set small ramekins or bowls on the board for the honey, olives, and any loose candy corn you want to keep contained. Place honey near the brie, olives near the cheddar, and candy corn near the center.
  4. Layer the Meat and Fruit (3 minutes): Drape the prosciutto slices in loose folds near the brie and gouda. Arrange the clementine segments in small clusters around the board. Place the green grapes in small bunches near the goat cheese. Add the dried apricots in between the cheese wedges.
  5. Fill the Gaps with Candy and Nuts (3 minutes): Sprinkle the candy corn in small piles around the board. Add the dark chocolate pieces near the brie. Pour the caramel popcorn into a small bowl or pile it directly on the board. Scatter the salted mixed nuts in the remaining empty spaces.
  6. Add the Crackers and Dippers (2 minutes): Arrange the water crackers in a fan pattern near the brie and goat cheese. Place the pretzel sticks in a small bundle near the candy corn. If using baguette slices, stack them neatly near the cheddar and gouda.
  7. Final Touches (1 minute): Drizzle a little honey over the brie and goat cheese. Add a few extra clementine segments on top of the cheese for color. Check for any bare spots and fill them with nuts or candy corn.

Notes

Assemble the board no more than an hour before serving. For best flavor, take cheese out of the fridge 30 minutes before serving. Use small bowls for loose items to keep the board tidy. If the board feels too full, remove a few crackers or nuts for better visual appeal.
