  • 2 large eggs

  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides. Lightly spray with non-stick cooking spray.
  2. Make the snickerdoodle crust: In a large bowl, combine yellow cake mix, melted butter, 1 egg, 1 teaspoon cinnamon, and cream of tartar (if using). Mix until a soft dough forms. Press evenly into the bottom of the prepared pan. Bake for 10 minutes, then remove and let cool slightly.
  3. Prepare the cheesecake filling: In a separate bowl, beat softened cream cheese with 1/2 cup granulated sugar until smooth and creamy (about 2 minutes). Add 2 eggs one at a time, mixing well after each addition.

  6. Make the cinnamon-sugar topping: In a small bowl, mix 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Sprinkle evenly over the cheesecake layer.
  7. Bake for 30-35 minutes. The edges should be set, but the center will still have a slight jiggle. If browning too quickly, tent with foil for the last 5 minutes.
  8. Cool completely on a wire rack for at least 1 hour at room temperature. Then refrigerate for at least 3 hours (overnight is best) until fully set.
  9. Slice and serve: Lift bars out using parchment paper, place on a cutting board, and slice into squares with a sharp knife. Wipe knife clean between cuts for neat slices.
