A warm, gooey, shareable skillet cookie for two with crispy edges and a soft center, ready in about 25 minutes. Perfect for date night or a cozy treat.

  • 4 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (semi-sweet recommended)

Instructions

  1. Preheat oven to 350°F (175°C). Place a 6-inch cast iron skillet in the oven to preheat.
  2. Melt the butter in a small microwave-safe bowl and let cool for 1-2 minutes.
  3. In a medium bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth and slightly thickened, about 30 seconds. Add egg yolk and vanilla extract; whisk until glossy and well combined.
  4. In a separate small bowl, whisk together flour, baking soda, and salt.
  5. Pour dry ingredients into wet ingredients. Fold gently with a spatula until just combined (do not overmix).
  6. Fold in chocolate chips, reserving a few to press on top.
  7. Carefully remove hot skillet from oven. Lightly spray with non-stick cooking spray or brush with melted butter.
  8. Press dough evenly into the skillet. Press reserved chocolate chips on top.
  9. Bake for 12-15 minutes, until edges are golden brown and center is still slightly soft.
  10. Cool in skillet on a wire rack for 5-10 minutes. Serve warm.

Notes

For extra gooey center, bake 12 minutes; for more well-done, bake 15 minutes. Serve with vanilla ice cream. Dough can be frozen unbaked for up to 3 months.
