A light, bubbly, and citrusy non-alcoholic mojito mocktail featuring fresh lime, mint, and homemade ginger syrup, perfect for summer gatherings and warm evenings.

Ingredients

  • 2 medium fresh limes, juiced (about 2 ounces or 60 ml)
  • 1012 fresh mint leaves, plus extra for garnish
  • 2 tablespoons ginger syrup (homemade preferred)
  • 1 cup (240 ml) sparkling water or club soda
  • 1 teaspoon simple syrup or honey (optional, adjust to taste)
  • Ice cubes (preferably large cubes)
  • Fresh citrus slices (lime, lemon, or orange) for garnish (optional)

Instructions

  1. Prepare the ginger syrup by simmering ½ cup (120 ml) water with ½ cup (100 g) sugar and 2 tablespoons (30 g) sliced fresh ginger for about 10 minutes. Strain and cool completely before use.
  2. Place 10-12 fresh mint leaves into a mixing glass. Gently muddle the leaves about 8-10 times using a muddler or the back of a wooden spoon to release oils without shredding.
  3. Add the juice of 2 medium limes (about 2 ounces or 60 ml) and 2 tablespoons (30 ml) ginger syrup to the muddled mint. Stir gently to combine.
  4. If desired, add up to 1 teaspoon (5 ml) simple syrup or honey and stir until dissolved.
  5. Fill a serving glass about ¾ full with large ice cubes.
  6. Slowly pour 1 cup (240 ml) chilled sparkling water or club soda into the glass. Stir gently once to combine without losing fizz.
  7. Garnish with a sprig of fresh mint and a lime wheel or wedge on the rim. Optionally, add thin slices of lemon or orange inside the glass.
  8. Serve immediately while bubbles are lively and mint is fresh.

Notes

Do not over-muddle the mint to avoid bitterness. Use fresh lime juice and mint for best flavor. Chill sparkling water before use to keep fizz longer. Stir gently after adding sparkling water to preserve bubbles. Large ice cubes slow dilution. Ginger syrup can be made ahead and stored refrigerated for up to 2 weeks. If fresh mint is unavailable, basil can be substituted. Adjust sweetness carefully to maintain balance.
