  • 1 cup shredded sharp cheddar cheese
  • 23 fresh jalapenos, finely diced (seeds and membranes removed for milder heat)
  • 1/4 cup cooked and crumbled bacon
  • 1216 whole bacon strips (thick-cut recommended)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 1216 toothpicks (soaked in water for 10 minutes if wooden)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Place a wire cooling rack on top if available.
  2. Cook the bacon strips until about halfway done (pliable but not fully crispy). Drain on paper towels and let cool.
  3. In a medium mixing bowl, combine softened cream cheese, shredded cheddar, diced jalapenos, crumbled bacon, Parmesan, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Mix until evenly incorporated.
  4. Using a small cookie scoop or tablespoon, portion out about 1.5 tablespoons of the mixture per bite. Roll into a ball, then shape into a ghost-like form (rounded top with a small tail at the bottom). Place on the prepared baking sheet.
  5. Wrap each ghost with a half-cooked bacon strip, starting at the bottom and wrapping upward, slightly overlapping. Leave the top of the ghost exposed. Secure the end with a toothpick.
  6. Bake for 18-22 minutes, or until the bacon is crispy and the filling is hot and slightly golden around the edges. If not using a wire rack, flip halfway through.
  7. Let rest for 5 minutes before serving.

Pre-cook bacon until halfway done to ensure it crisps up without burning. Chill shaped ghosts for 10-15 minutes before wrapping if the mixture is too soft. Soak wooden toothpicks in water for 10 minutes to prevent burning. For extra crispiness, use a wire rack on the baking sheet. Adjust spiciness by removing or leaving jalapeno seeds and membranes.
